Ingredients:
For Marination:
- 500g
mutton (goat meat, cut into pieces)
- ½
cup yogurt
- 1
tbsp ginger-garlic paste

tsp turmeric powder

tsp red chili powder
- 1
tsp garam masala
- ½
tsp salt
- 1
tbsp lemon juice
For Rice:
- 2
cups basmati rice (soaked for 30 minutes)
- 4
cups water
- 1
bay leaf
- 2-3
green cardamoms
- 1-inch
cinnamon stick
- 2-3
cloves
- ½
tsp salt
For Biryani Masala:
- 2
tbsp ghee
- 2
tbsp oil
- 2
onions (thinly sliced)
- 1
tomato (chopped)
- 1
tbsp ginger-garlic paste
- 2
green chilies (slit)
- ½
cup mint leaves
- ½
cup coriander leaves
- 1
tsp cumin seeds
- 1
tsp coriander powder
- 1
tsp red chili powder
- ½
tsp garam masala
- ½
cup milk (with a pinch of saffron)
- 2
tbsp fried onions (for garnish)
Instructions:
Step 1: Marinate the Mutton
- In a
bowl, mix mutton with yogurt, ginger-garlic paste, turmeric, red chili
powder, garam masala, salt, and lemon juice.
- Cover
and marinate for at least 2 hours (overnight for best results).
Step 2: Cook the Rice
- Boil
water in a pot, add bay leaf, cardamoms, cinnamon, cloves, and salt.
- Add
soaked basmati rice and cook until it's 70% done. Drain and set aside.
Step 3: Prepare the Mutton Masala
- Heat
oil and ghee in a heavy-bottomed pan.
- Add
sliced onions and sauté until golden brown.
- Add
ginger-garlic paste and sauté until the raw smell disappears.
- Add
tomatoes and cook until soft.
- Add
marinated mutton and cook until it changes color.
- Cover
and cook on low heat until the mutton is tender (add water if needed).
- Stir
in coriander powder, red chili powder, and garam masala.
- Add
mint and coriander leaves. Mix well.
Step 4: Layering the Biryani
- In a
heavy-bottomed pan, spread a layer of cooked mutton masala.
- Add
a layer of half-cooked rice over it.
- Pour
saffron milk over the rice and sprinkle fried onions.
- Cover
with a tight lid and cook on low flame (Dum) for 25-30 minutes.
Step 5: Serve (4-5
People)
- Gently
mix and serve hot with raita or salan.
