Bihari cuisine is known for its rich flavours and unique culinary traditions. One of the popular Bihari dishes called Bihari Chicken Curry
Ingredients:
- 500 grams of chicken pieces (with bones)
- 6 onions, finely chopped
- 3 tomatoes, pureed
- 2.5 tablespoons ginger-garlic paste
- 4 green chillies, slit lengthwise
- 2 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 2 teaspoon cumin powder
- 2 teaspoon coriander powder
- 2 teaspoon garam masala powder
- Salt to taste normal white sea salt
- 8 tablespoons mustard oil
- Fresh coriander leaves for garnishing
Instructions:
- Heat the oil in a large, deep pan or a mitti kadai over medium heat.
- Add the chopped onions until they turn golden brown.
- Add the ginger-garlic paste and green chillies.
- Add the chicken pieces and cook until they are slightly browned on all sides.
- Add the turmeric powder, red chilli powder, cumin powder, coriander powder, and salt. Mix well to coat the chicken evenly with the spices.
- Reduce the heat to low and cook for about 15 minutes, stirring occasionally.
- Add the tomato puree and mix well. Cover the pan and let it cook for another 15-20 minutes, or until the chicken is cooked through and tender.
- Sprinkle garam masala powder over the curry and give it a final stir.
- Garnish with fresh coriander leaves.
- Serve the Bihari Chicken Curry hot with steamed rice, roti, or paratha.
